Refreshing Watermelon Juice

Summer has many joys one of my top favorites is watermelon. It is so versatile, whether in a salad, grilled, or as a sorbet. But as a drink, it’s a a real “game-changer”.

I remember from my childhood that we bought these huge 10-kilo melons and then cut them into small pieces, and with my brothers and sisters, we always liked to eat them as a snack (and fight over the bigger pieces).

Why not just make a drink out of it? I blended the watermelon, added lemon juice and fresh mint from the garden and it is so refreshing and hydrates the body on hot summer days.

And this colour!!!! Look at that! A real eye-catcher on any garden table.

Refreshing Watermelon Juice

This summer drink is a absolute feast for your eyes and tastes better, perfect for any garden table. It is so easy and quick to make that the whole family will love you for it.

Servings 4 portions à 200 ml

Equipment

  • 1 blender

Ingredients
  

  • 800 g sliced watermelon
  • 1 handfull mint leaves
  • 2 tablespoons agave syrup
  • 1/2 lemon freshly squeezed

Instructions
 

  • Cut the watermelon into chunks and remove all seeds.
  • Place the cut-up watermelon in the blender and blend until smooth (for about 30 seconds).
  • Pour the juice through a sieve into a jar. Help with a spoon so that you get all the liquid out.
  • Cut the mint leaves. (preferable in a mortar). Add it to the juice.
  • Add the agave syrup and the juice from lemon.
  • Stir vigorously until everything is combined.
  • Serve lightly chilled or over ice. Garnish each glass with a mint leaf.
