Savoury Galette

Pastries are more than just a simple part of baking (they make up a large part of it). I love combine them with savoury dishes, why not?
The mixture of sweet pastry and sun-ripened tomatoes is just so good (try yourself and experiment).

Making the dough yourself is always something special (very therapeutic as well 😉) and tastes much better. Let me show you how easy it is:

Shortcrust Pastry

  • 225 g flour
  • 100 g butter small pieces

Filling

  • 1 tablespoon olive oil
  • 1 clove of garlic
  • 3 big tomatoes
  • 1 teaspoon paprika powder
  • 1 pinch of salt

Anleitungen

Shortcrust pastry

  • In a large bowl, add the flour, salt and butter.
  • Gently use your fingertips to rub the butter in. (Avoid using your whole hand, because the palms of your hands are quite warm and going to melt the butter.)
  • Make a little well in the center and a couple of tablespoons of water.
  • Get the hands in and just bring that dough together by gently squeezing it.
  • Wrap the dough in cling film and leave it to rest in the refrigerator while you prepare the filling.

Filling

  • Cut the tomatoes into small pieces.
  • Put some olive oil in a pan and heat to medium.
  • Grate in a clove of garlic and for a hit of sweet add some delicious tomatoes.
  • Add a dash of paprika powder and salt (or spices of your choice).
  • Turn the heat off and let that cool down for a little bit.

Get done

  • Preheat the oven to 180 ℃.
  • Take your pastry out of the refrigerator and roll out the dough on a floured surface.
  • I love it when it's a rough circle, but it doesn't have to be perfect. Important is that you get kind of an even thickness (about five millimeters).
  • Pop it on a tray lined with baking paper.
  • Add a thin layer of cream cheese right in the center. And load it up with the filling.
  • Take the edges and then you literally just fold it over. If you get little cracks, just fix it. And then go over again.
  • Slide the tray in the oven and bake for about 25 minutes.
  • Cut it into small pieces and serve as an appetizer or enjoy as a main course.
