Turkish Pide is comfort food with a flavorful and soft bread base and yummy toppings of ground beef and is as good as a pizza.
I love it because it looks fancy but is super quick to make.
Even though it looks very special it is easy to make. You make a dough and top it with filling of your choice.
It’s perfect for the whole family because everyone can top it as they wish. Some people insert Swiss Chocolate ( A Toblerone) and use it as a Dessert!
Turkish Pide
Turkish Pide is comfort food with a flavorful and soft bread base and yummy toppings of ground beef and is as good as a pizza.
Ingredients
Pide Dough:
- 500 g white flour
- 7 g instant yeast
- 1 teaspoon salt
- 250 g water
- 60 g vegetable oil
Tomato Topping
- 1 can of tomatoes
- 250 g ground meat (beef)
- 1 onion finely chopped
- 2 teaspoons tomato puree
- 2 tablespoons parsley finely chopped
- 1 pinch of salt, black pepper
- 1 teaspoon oregano
- 1 teaspoon mint leaves finely chopped
Cheese filling
- 100 g shepherd's cheese
- 50 g grated Emmentaler cheese
- 50 g heavy cream
- 100 g cream cheese
- 1 teaspoon salt, black pepper
- 1 teaspoon curry
Garnish
- 1 egg yolk
- 1 teaspoon sesam
- 1 teaspoon black seeds
Instructions
Pide Dough
- In a bowl of a stand mixer, combine all ingredients.
- Use the dough hook from the mixer and start at a low speed. Gradually increase the speed to medium until the ball forms. This should take about 30 seconds. If the dough does not release from the sides of the bowl, add a pinch of flour. If the dough is very dry and floury, add a small amount of water.
- After the kneading is finished, place the dough in a large bowl and drizzle a little bit of olive oil on top and cover the dough with plastic wrap and a tea towel. Place the bowl in a warm place to rise for about 40 minutes or until it double in size.
Tomato Topping
- Fry the ground meat with the onion until it is well-cooked.
- Add the tomatoes, herbs and spices.
Cheese filling
- Add all the ingredients until combined.
Forming the Pide
- Place a baking sheet in the oven. Preheat the oven to 200 ℃.
- Once the dough has doubled in size, transfer it onto a floured surface and form a long and divide the dough into eight pieces.
- Lightly flour a clean surface, and begin rolling out one piece of dough into a large oval.
- Once you have stretched out the dough, place it on a parchment paper. I baked three Pide at a time. This depends on how large your baking stone is — So place two or three Pide dough on parchment paper and top it with any type of filling.
- Now, fold the edges of the dough over the filling and then pinch or twist the ends to form a boat or canoe-like shape. If you notice that the ends are not pinching together add a little bit of water on the end of the dough and that should help. Brush the outer dough with an egg yolk. Sprinkle some sesame and black seeds and repeat this step with the remaining dough.
Baking the Pide
- Place the parchment paper over the baking sheet and bake for about 12-14 minutes or until lightly golden along the sides.
- Once baked, place it on a wooden board, and for the Pide, I love brushing it with some olive oil and garnishing it with some chopped parsley. Enjoy!
