Yoghurt Pancakes – light and fluffy

I always look forward to the weekend, reason being pancakes are simply the best for a hearty breakfast when you have an active day ahead.

For a “balanced diet” (I also like to eat other treats), I love these yoghurt pancakes. They are easy to digest and not too sweet.

They are fluffy, a snap to whip together, and a great way to work some extra nutrition into your breakfast.

Yoghurt is a healthy addition and my little brothers and sisters love these pancakes. Since they are not too sweet, you can top them with Sweet (i.e. nut nougat cream, fruit, jam) or Savory (i.e. bacon, cheese, ham).

What I like about these pancakes is the simplicity (Quick "n" Easy). You quickly mix all the ingredients together and bake them in the pan. The yoghurt makes them very moist and easy to digest. Your kids will love you for them.

Ingredients
  

  • 200 g flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 200 g yoghurt (1,5%)
  • 1 teaspoon vanilla extract
  • 1 tabelspoon granulated sugar
  • 150 ml sparkling water

Instructions
 

  • Put all the ingredients into a bowl and use a whisk to fold the pancake batter together.
  • Heat a frypan over medium-low heat.
  • Add a small amount of butter, about 1/2 tsp or alternatively you can use oil.
    When the butter has melted, scoop one ladle of pancake batter directly into the pan. Repeat with remaing batter.
  • Let cook until top begins to bubble and edges are golden.
    Flip pancake over and let cook another minute or until bottom is golden.
  • Serve warm pancakes with syrup, fresh fruits or with ham and cheese. Enjoy!
