Equipment

  • 1 pan middle size (= 20cm)
  • 1 grater

Ingredients
 
 

  • 4 eggs medium
  • 1 tomato (150 g)
  • 2 tbsp olive oil
  • 1 tsp garlic ground
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp fresh parsley finely chopped
  • 1 tsp thyme dried
  • salt and pepper to taste
  • 3 slices of lemon optional
  • 8 olives optional
  • 1 chili pepper
  • bread

Instructions
 

Preparing the spiced tomato sauce

  • Cut the tomato in half and grate it until only the skin remains. Add the spices and herbs to the sauce and mix it well.

Preparing the eggs

  • Heat olive oil in a large pan over medium heat.
  • Add the spiced tomato sauce and cook it for about 1 minute.
  • Add the eggs and whisk them with a spoon.
  • Once the eggs are cooked to your liking, season it with salt and pepper and garnish it with lemons, olives, and chili.
  • Serve the Moroccan eggs directly from the pan, accompanied by crusty bread for dipping.
