Moroccan-style Breakfast Eggs
Poached eggs in a spiced tomato sauce. It's a hearty tasty breakfast option and should not be missing at your weekend breakfast menu options (or afternoon/evening snack).
Equipment
- 1 pan middle size (= 20cm)
- 1 grater
Ingredients
- 4 eggs medium
- 1 tomato (150 g)
- 2 tbsp olive oil
- 1 tsp garlic ground
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp fresh parsley finely chopped
- 1 tsp thyme dried
- salt and pepper to taste
- 3 slices of lemon optional
- 8 olives optional
- 1 chili pepper
- bread
Instructions
Preparing the spiced tomato sauce
- Cut the tomato in half and grate it until only the skin remains. Add the spices and herbs to the sauce and mix it well.
Preparing the eggs
- Heat olive oil in a large pan over medium heat.
- Add the spiced tomato sauce and cook it for about 1 minute.
- Add the eggs and whisk them with a spoon.
- Once the eggs are cooked to your liking, season it with salt and pepper and garnish it with lemons, olives, and chili.
- Serve the Moroccan eggs directly from the pan, accompanied by crusty bread for dipping.
