Combine flour, yeast, and salt in a large bowl. Add water, mixing all of the ingredients. The dough will be wet, sticky, and shaggy.
Place a dry tea towel over the top and leave it in a warm place for about 2-3 hours, until double-sized.
Preheat oven to 250℃ 30 minutes before baking. Place a cast iron pot in the oven with the lid.
Scrape the dough out of the bowl onto the work surface with a spatula. Roughly form a round shape.
Measure out a large piece of parchment paper. Roll the dough slowly onto the paper. Remove the pot out of the oven and transfer the dough into the pot.
Cover with a lid and bake for 30 minutes. Then remove the lid and bake for an additional 12-15 minutes, until the loaf is beautifully golden browned.
Let it cool briefly before slicing.
