Carefully cut brioche bread into 2 cm pieces and set it aside.
In a deep and wide bowl, whisk together eggs, milk, vanilla extract, and sugar. Whisk until well combined. Set aside.
Add a little bit of butter to a pan and place over medium heat.
Meanwhile, dip each slice of bread into the egg mixture, and flip back and forth for about 15 seconds. Brioche bread is quick to soak up the egg. I love it when the bread is really soaked up.
When the butter has melted and begins to foam, add the coated brioche. Dip and transfer as many pieces of brioche will comfortably fit in the pan without touching. Cook for about 3 to 4 minutes or until golden brown and then flip the bread and cook for another 3 to 4 minutes.
Transfer to a platter and keep warm until ready to serve.
Repeat the process with the remaining butter, bread, and egg mixture.
Top it with your favorite toppings and serve immediately. (I love it with ice cream, fresh berries, and cinnamon sugar) Enjoy!
